June 2013 Food and Drink Pairing: Bisou's Maroni Cocktail and Red Cedar Grille's Orange Hefeweizen Cake

Classic vanilla cake and and old-school cocktail are revamped in both refreshing preparations, and just in time for summer’s heat.

This Sip

Bisou GM David Howard pays homage to vintage cocktail classics with his Maroni, a tongue-tingling fusion of the Manhattan and Negroni that blends celery bitters, Bulleit bourbon, house-made honey syrup, fresh orange juice, and Cynar liqueur. The final result is bold and bittersweet, yet goes down easily. For a tall fizz, request club soda. $10. 4161 Main St., Philadelphia, (215) 487-1230, bisouonmain.com.

The Bite

Red Cedar Grille owner/chef Theo Charitos’ Orange Hefeweizen Cake is a refreshing interpretation of a classic slice of vanilla cake, infused with Franziskaner beer, steeped in a salted caramel, cleverly crafted with an airy egg-white base, and finished with bitter candied orange and a creamy citrus glaze. $5. 249 Bethlehem Pike, Colmar, (267) 477-1422, theredcedar.com.
