Old Eagle Tavern’s Corned Beef Special has garnered chef Rich Benussi kudos for his new-school take on the stacked-to-the-sky standby. He corns the marbled beef in-house, and also ferments the tangy pickle chips on top. The flavor-packed pumpernickel bread is crafted with spent grain from Yard’s Porter. $12.
