La Madera in Kennett Square to Reopen as Verbena BYOB

The restaurant has revamped to include a new look and new chef, Scott Morozin.

Following a brief shutdown after a change in ownership earlier this year, La Madera Bistro in Kennett Square is set to reopen mid-February with a reinvented identity and new chef. Scott Morozin, one of Philly’s best chefs, will head Verbena BYOB’s kitchen when it debuts.

Over the past month, Morozin has been concocting a creative menu using seasonally inspired foods from local farms and organic produce. Expect items like stuffed quail kohlrabi two ways with roasted brussels sprouts and apple foam; chicken rillette with lemon poppy and hibiscus-macerated grapes, butter-roasted walnuts, vodka-hydrated currants and lemon balm on top; and mushroom ravioli with roasted artichokes and a truffle vinaigrette.

With Morozin at the helm, it’s no wonder these dishes look and sound amazing, as he’s been perfecting his craft since attending the Culinary Institute of America. Since then, he’s worked with Stephen Starr at Tangerine, as well as chef Jay Caputo at Espuma and chef Daniel Stern at Gayle. These experiences stoked his passion for cooking Mediterranean plates and playing with different types of food.

Now, 15 years later, he’s bringing the very heart and soul he puts into his food to Verbena BYOB.
