This Local Ice Cream Truck Will Cater Your Next Party
Lower Merion’s PBJ Soft Serve is serving up nostalgic summer treats.

A summer staple, ice cream trucks are reminiscent of hot days spent playing outside with friends and a sweet, cooling treat at the end of the day. While most associate them with children, PBJ Soft Serve is aimed at making its offerings a refreshing splurge for adults, too.
Husband and wife duo Beau and Sheryl Jadrosich launched the food truck in March and started selling out of a custom-built 2001 GMC van in April. Based in Lower Merion, PBJ Soft Serve has brought to fruition Beau’s longtime love of the culinary arts. A football coach for the University of Pennsylvania from 2017-18, this new venture was, in many ways, years in the making. “I’ve always been into the restaurant industry since I was young, helping my parents in the kitchen, experimenting with different things and being a part of the creative process,” he says. “I knew at some point I’d want to make this a career in some capacity.”
Not just any ice cream truck, PBJ Soft Serve is available for catered events like parties, community events and weddings with advanced notice, which, to Beau, is what makes the business stand out. “After tossing around some restaurant ideas and other food truck options, I realized the value of ice cream and the fact there are very few trucks in the area that model themselves as a catering-first operation,” he notes.
Fittingly, the name is a nod to another childhood staple and, according to Beau, “the best sandwich of all time.” It’s also a play on his initials.
The menu is straight-forward with a selection of premium chocolate and vanilla soft serve, which can also be made in a twist. Toppings includes favorites like sprinkles or peanut butter chips. The locally-sourced ingredients are both Kosher and gluten-free. Water ice is also available in cherry, chocolate, lemon and mango flavors.
