Whether you’re already planning a post-Thanksgiving agenda or need a treat after a holiday with the in-laws, here is one wine event you won’t want to miss.
On Sunday, Nov. 29, at 5:30 p.m., Conshohocken’s French darling, Spring Mill Cafe, will host an expert wine pairing and tasting led by the charismatic Hudson Austin of The Wine Merchant. The esteemed sommelier is a modern-day wine educator who far surpasses dated wine-tasting stereotypes, making discovering new wine varieties not only delicious, but fun.
His upcoming five-pour, four-course affair will kick off with a bubbly toast of the French Simonet Blanc de Blancs, followed by finely curated rounds with food perfected by chef Michele Haines. The courses are as follows:
●Seared sea scallop with citrus beurre blanc and caramelized fennel, paired with Idaho’s Sawtooth Pinot Gris
●Chicken confit cassoulet, paired with Slovenia’s Avia Pinot Noir 2010
●Lancaster blue cheese with quince paste and toast points, paired with a second pour of Slovenia’s Avia Pinot Noir 2010
●Poached apples with chocolate shavings and caramel whipped cream, paired with Blandy’s Alvada Five-Year Madeira
