Wayne Art Center Hosts Pig Butchering Class with Wyebrook Farm

Learn how to use the whole animal, and nab a few new recipes, too.

Have you ever wondered what part of the pig produces bacon? How about baby back ribs? Did you know that a pork butt actually comes from the shoulder? Get intimate with all parts of the pig with a nose-to-tail butchering class offered by Honey Brook’s Wyebrook Farm on September 24 from 6:30–8:30 p.m. at the Wayne Art Center.

Head butcher Alexi Alejandro will introduce participants to Wyebrook Farm and their efforts to pasture-raise their pigs, which results in increased marbling and extra rich taste. The demonstration will highlight cuts that you won’t find in your local supermarket and how to break down a whole pig.
