Fearless Restaurants to Open an Italian Eatery in Space Currently Occupied by Wayne’s Paramour

The restaurant group behind Autograph Brasserie, White Dog Café and other popular local spots is set to open Rosalie late this summer.

After seven years in business, Paramour at the Wayne Hotel is set to close its doors on June 23. Replacing the upscale restaurant will be Rosalie, a new Italian concept from Marty Grims’ Fearless Restaurants group. 

Rosalie will feature Italian soul food with a “gentle-contemporary approach,” according to a statement from executive chef Merick Devine. The restaurant, which is named for Grims’ mother, will offer a seasonal menu featuring local ingredients.

Ettore Cerase, who most recently worked as vice president of Davio’s Northern Italian Steakhouse, will serve as general manager. The restaurant will be open daily for lunch and dinner, and will also offer brunch, a private event space and outdoor dining.

This is Fearless Restaurants’ second big announcement of 2019. The hospitality group, which owns 10 restaurants throughout the region, including Autograph Brasserie in Wayne, is also planning to open a fourth location of its White Dog Café concept in Glen Mills this fall.
