Photo by Jared CastaldiBrewing a fantastic cup of coffee is all in the pour. So says Tim Noble of Town Hall Coffee in Bala Cynwyd—and he should know. Town Hall serves some of the best coffee around, thanks to carefully selected beans, incredibly fresh roasts, and its classic pour-over method.

Noble has a few tips for stepping up your coffee game at home. First, invest in a burr grinder, which pulverizes the beans into uniform grounds, improving a brew’s overall flavor. Since coffee types have different weights, a small kitchen scale ensures you’re using the exact amount of beans for each cup (24-26 grams for each 12-ounce cup, or 60 grams for a liter).

Set a paper filter in a V60 pour-over cone (available online), and place it atop a mug or carafe. Pour some hot water over the filter to pretreat it, then weigh and grind the beans and pour them in. Slowly add a small amount of boiling water over the grounds, letting it settle before adding what remains of the 12 ounces. Trust me, you’ll taste the difference.
