Chef Jason Ziglar's Super Bowl Ring-Stingers

Super Bowl Ring-Stingers
• 1 lb. goat cheese
• 24 shrimp (about 1 lb.)
• 12 jalapeño peppers
• 12 slices bacon, smoked (either pork or turkey)
• Salt and pepper, to taste

To make:
• Cut jalapeño peppers in half lengthwise and remove seeds.
• Remove shells and veins from fresh shrimp; rinse thoroughly with cold water and set aside.
• Using a small spoon, fill hull of pepper with goat cheese.
• Place shrimp firmly on top of cheese, and season with salt and pepper.
• Cut bacon slices in half, and wrap each shrimp and pepper completely with bacon, securing with toothpicks.
• Roast “stingers” at 375 degrees 7-10 minutes.

Dipping Sauce
• 1 1/2 cups mayonnaise
• 1 tbsp. minced garlic
• Zest from one lemon
• 1 tbsp. tomato paste
• Zest from one lime
• 1 tsp. cayenne pepper
• 1/4 cup fresh lemon juice
• Salt and pepper, to taste

To make:
• Combine all ingredients in a mixing bowl and whisk to blend.
• Season with salt and pepper.
