Agave Mexican Cuisine Offers a Twist on Classic Dishes

The Chadds Ford restaurant’s octopus ceviche and shrimp tacos are sure to please.

Opened this past January, Agave Mexican Cuisine offers authentic, elevated Mexican and comes courtesy of co-owners Claudio Sandolo and Roberto Medina (Spasso Italian Grill). “We’re not your typical Taco Tuesday spot,” says GM Joe Pinto of the BYOB. 

Inside, the charcoal grays and mustard yellows complement the wood floors and bring warmth to the large 100-seat dining room. Designer Cris Mata conjures a tasteful Spanish sophistication with art and potted succulents—and that carries over to the cuisine. 

The cena (dinner), almuerzo (lunch) and desayuno tardio (brunch) menus all exceed expectations with their uniformly well-executed creations. The creamy guacamole, with abundant chunks of avocado, was downright blissful, as were the house-made chips (always a good sign). A deliciously structured octopus ceviche comes layered with salsa, avocado, cilantro and lime. The tacos, enchiladas and burritos are all fresh and delicious.

Standout entrées include the pollo poblano with jumbo lump crab and Kennett Square mushrooms, plus any of the branzino and salmon creations. In-house desserts flan and tres leches cake. Margarita mixes are also available.
