When Clark Gilbert moved his restaurant to Main Street, we sure were glad he took his signature appetizer with him, even if it doesn’t always make an appearance on the menu. Tuna tartare, crispy veal sweetbreads, a tangy tonnato sauce—utter perfection worth a visit on its own.
